We’re of the opinion that being in isolation doesn’t mean you can’t enjoy the finer things in life; in fact, it’s more reason to create them. We’ve teamed up with Chef Tyson from I Like Too Much to bring you a mouth-watering recipe – perfectly paired with our wines – so you can feel like you’re getting the real restaurant experience without having to leave the house.
Don’t worry, we’re not going to go all Jamie-Olivier on you. This bolognese recipe has been specially created so you can put it together with the bits and bobs you’ve already got in the house. All you need to do is order the wine!

Both from Italian roots, Bolognese and Sangiovese are a classic pairing. Bolognese has acidity from tomatoes and richness from meat, layered with spice. It’s simply crying out for a mid-weight red wine with fruit, savoury and spice… lucky we have just that. So here we have it! Tyson’s Bolognese recipe perfectly paired with our 2015 Black Label Sangiovese.
Our Sangiovese is one of the standouts in the Black Label line-up and a favourite in the Cellar Door. 2015 was a benchmark year in the Yarra Valley so the fruit is phenomenal. The Sangiovese is a little different to a traditional Italian style, we let it ripen a little longer than usual so it’s a richer style with a punch of blackcurrant fruits and a beautiful hint of savoury and spice on the back pallet.

And now for the bit that you’re all here for – the recipe! Bon appetit.
Preparation time: 15minutes | Cooking time: 30 minutes
Ingredients:
1kg premium beef mince
3 x 250g Italian canned crushed tomatoes
150ml sunflower oil
3 x garlic cloves
3 x shallot
Half a bunch of thyme
2 tablespoons of dried oregano
2 tablespoons of smoked paprika
4 x medium carrots
Salt + pepper
150ml red wine vinegar
Method:
1. Add sunflower oil to a large saucepan and place on medium heat
2. Finely dice the garlic and shallots and add to the oil in the saucepan
3. In a separate pan cook off your mince meat with salt/ pepper and sunflower oil until golden brown
4. Then add your finely diced carrots ( use a blender = much faster) and thyme to your garlic and shallots.
5. Cook the ingredients for 5-8 minutes on medium heat
6. Now add your vinegar/ paprika/oregano and crushed tomatoes
7. Leave on simmer for 10 minutes then add your browned mince meat
8. Leave the Bolognese sauce on medium heat for a further 10 minutes and then you’re ready to serve with your favourite pasta! (Gnocchi pictured)
