Method: hand harvested
Process: destemmed + lightly crushed, cold soaked in open pots for 4-6 days
Fermentation: open pots, hand plunged and pumped over twice daily, 14 days post fermentation maceration
Barrel: matured in new, 30% + seasoned French hogsheads for 14 months
Alcohol: 13.5%
