Made from fruit sourced from the Yarraland vineyard by Rob Dolan, Adrian Santolin + the team.
This Syrah went through a 4 day cold soak before being moved to open pot fermenters. The fruit was hand plunged and inoculated before being matured for 14 months in 40% new French oak.
Rob Dolan is known for his skill in the winery, passion for helping others, and cheeky character.
He says the trick is sourcing the best fruit, and from there, using a ‘less is more’ approach in the winery to bring the wine it to its full expression.
The pepper spice of the Syrah complements the smoky rib rub with the plum and mulberry fruit providing a lovely contrast to the richness of the ribs.
